Chef Greg Spaulding opened Middle Fork Kitchen Bar in 2015 as Chef du Cuisine and now owns his own restaurant called Salt & Vinegar located in both Ethereal Public House and Blue Stallion.

Following Middle Fork, Greg worked with Chef Cole Arimes and his team for a year at Coles 735 Main and then became Executive Chef at West Main Crafting Company. All of his background contributed to his amazing seasonal menus at both locations his signature brand, Salt & Vinegar, now serves.

You can try out his cuisine during a Food Tour in Lexington through Bites of the Bluegrass or just wander in to one of the two locations and order straight from the menu. I had the wonderful opportunity to try his Pretzel & Obatzda and Hangar Steak during one of the food tours. I am now a fan of Salt & Vinegar, and have started working my way through his menu at both locations.

Pretzel & Obatzda at Salt & Vinegar

The Pretzel & Obatzda is a Papa pretzel bavarian sourdough pretzel. It’s served with brie and camembert cheese whipped with herbs, spises and BSB dunked. There is also toasted caraway and black pepper in this tasty concoction.

Hangar Steak at Salt & Vinegar

The Hangar Steak is an 8 az steak, cooked Pittsburgh with whipped potatoes and asparagus. There is also a side of Pistou of sorts. Interesting fact here – a hangar steak is cooked the way it is to accomodate workers who did not have a long lunch back in the day. They only had time for their steak to be seared on the outside but not thoroughly cooked to a medium or well done state through out. Thus, cooked Pittsburgh style became a thing for the hangar steak delicacy.
